Welcome back to our 3rd installment of Simply Living Simply’s Semi-Homemade Thanksgiving!
Were going to talk a little about Breads and Salads today…with a few links that I thought you might like.
Breads
Thanksgiving would NOT be Thanksgiving without the rolls! And everyone has their own preference. You have those that are firmly committed to Pillsbury Crescent Rolls, those that must have homemade whole wheat or white dinner rolls. There are those that LOVE pull apart rolls or homemade bread loaves such as french or sourdough or rich dark breads such as rye, squaw or even Honey Wheat Bushman. Or some even love the sweetness of Hawaiian bread. Which ever is your preference, Thanksgiving dinner was made to include rolls or bread of some kind. What would you sop up the gravy with y’all??

And here is MY Recipe and what we have for Thanksgiving Dinner, Christmas Dinner…and hey, just about any OTHER dinner around here! This wonderful recipe came to me from my good friend Melissa K. Norris about a year ago. It was the last recipe I ever searched for and the only one I make now. It never ever fails me, turns out perfect and delicious every single time…and did I mention easy?!!

Delicious Whole Wheat Rolls
Ingredients
- 2 ½ C warm water
- 3 Tbsp sugar (I use raw sugar)
- 3 Tbsp yeast
- 2 Tbsp olive oil
- 6 C flour (I use half whole wheat pastry and half unbleached white flour)
- 2 tsp salt
- 1 tsp baking powder
Instructions
- Stir water, yeast, and sugar together.
- Leave for 5 minutes until it becomes frothy on top.
- Add oil, flour, salt and baking powder and mix well.
- Remember to always use glass, wooden, or plastic bowls and spoons when making bread.
- Metal inhibits the yeast from rising properly.
- Knead for 6-8 minutes on floured surface.
- Form half of dough into a loaf.
- Form rolls and place on baking sheet.
- Bake rolls at 400 degrees for 12-15 minutes.
- Leave bread for another 5 -10 minutes.
Salads
Now lets talk about salads. There are as many salads out there as there are grains of sand on the beaches over here! And each person has their favorite and traditional ones they serve. I will showcase 2 of my favorites that I tend to rotate in and out every year. And also throw in some good links for ya too!

My Recipes: Southern Ambrosia and California Spinach & Cranberries
Southern Ambrosia
Ingredients
- 1 (11-ounce) can mandarin oranges, drained
- 1 (8-ounce) can crushed pineapple, drained
- 2 cups sweetened shredded coconut
- 2 cups miniature marshmallows
- 1 (8-ounce) tub COOL WHIP Whipped Topping
Instructions
- Using a rubber spatula, gently fold together all ingredients in a large serving bowl.
- Refrigerate until ready to serve.
California Spinach & Cranberries
Ingredients
- 1/2 pound hickory smoked bacon slices, roughly chopped
- 1/2 cup pecans, toasted and roughly chopped
- 2 C Spinach
- 1/2 small red onion, thinly sliced
- 1 C dried cranberries
- 1 C Crumbled Bleu Cheese
- Dressing:
- 1/4 C buttermilk
- 1/4 C sour cream
- 1/4 teaspoon sugar
- Salt and freshly cracked black pepper
Instructions
- Preheat oven to 350 degrees.
- Fry chopped bacon in a medium skillet over medium-high heat until brown and crisp, drain.
- Toast pecans in the oven on a 1/4-sheet tray until lightly golden and fragrant, about 6 minutes.
- For Dressing: Mix in the buttermilk, sour cream, sugar, salt and pepper, to taste.
- Combine spinach, red onion, pecans, dried cranberries and bacon in large bowl.
- Toss with the dressing immediately before serving.

There you have some good info on Salads and Rolls, this info and recipes would be good anytime…perhaps for lunch or a light dinner?
Yes…I left one recipe out of the Salad offerings…Jello! I cover that recipe during Christmas.
