This last week was a difficult one for me. With my injured knee it made hobbling around a chore. Going to the store proved even difficult. Were doing a variety of meats this week, but mainly chicken.

One thing I’ve done for years is roast 2 chickens for Sunday evening dinner. With the work week you can do all kinds of things with the leftovers foe meals- a chicken salad of some kind (Greek is my fave), then burritos, and whatever else strikes your fancy!
