Blueberry Apple Crisp

I wanted a dessert…but not a heavy, over-filling type of dessert that leaves you feeling like a lead paperweight!  Something healthy, with good-for-you ingredients that I could make up in a jiffy and would satisfy that sweet tooth.  This crisp recipe fits the bill! Quick and easy to put together, I had all the ingredients and the bonus? This crisp is yummy hot or cold!

Ingredients:

1 C. diced apple, peeled

2 C. fresh or frozen blueberries

1/4 cup packed brown sugar

1/4 cup thawed orange juice concentrate

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

Topping:

1 cup old-fashioned oats

1/2 cup packed brown sugar

2 tablespoons all-purpose flour

1/2 teaspoon ground cinnamon

1/3 cup cold butter, cubed

 

Directions:

In a large bowl, combine the first six ingredients.

Apples and fresh blueberries!

Adding brown sugar

and cinnamon

and a little flour

Transfer to a 9-in. square baking dish coated with cooking spray. For topping, combine the oats, brown sugar, flour and cinnamon. Cut in butter until mixture is crumbly; sprinkle over fruit.

Topping is a yummy mix of Oats, brown sugar, flour and cinnamon

cut cold butter into cubes

add butter cubes to dry topping mix

cut butter in until crumbly

Bake at 350° for 30-35 minutes or until topping is golden brown and fruit is tender. Serve warm with ice cream.

Yield: 8 servings.
