This recipe that I’m sharing is a football favorite around here, but’s its GREAT anytime. The original recipe calls for white potatoes mixed in with everything. It makes for an awesome casserole but not an awesome figure. So you peeps know I had to do some tweaking to make it a low carb figure friendly meal!
What I came up with was this cheesy, spicy delicious veggie pasta dish. So grab some friends, make this casserole, & watch some movies, sitcoms or even….FOOTBALL!
Sorry about not having a ton of pics. We had company and the house was insane.
Ingredients
• 3-4 cups of pasta or vegetable noodles (I’ve used eggplant noodles that I cut with a [easyazon_link asin="B0007Y9WHQ" locale="US" new_window="default" nofollow="default" tag="simplivisim09-20"]Spiral Veggie Slicer[/easyazon_link] and spaghetti squash)
• 4 boneless skinless chicken breasts-cooked & shredded
• 5 sweet multi-colored baby bell peppers
• 2 cups of celery
• 1/2 batch green onions diced
• 1/2 purple onion chopped
• 6 eggs beaten
• 1 tbs of minced garlic (I use the kind in the picture)
• 4 tbs Worcestershire sauce or Bragg’s Aminos
• 2 tsp salt
• 1 tsp paprika
• 1 cup [easyazon_link asin="B001H3O6UO" locale="US" new_window="default" nofollow="default" tag="simplivisim09-20"]Blues Hog BBQ Sauce[/easyazon_link](pictures above)
• shredded cheddar cheese & blue cheese (I don’t measure. I just toss about a handful of each in the mix and then sprinkle some on top of casserole during the last few minutes of baking.)
Directions
Preheat oven to 425 degrees. In large mixing bowl, combine all ingredients thoroughly. Place into greased 9×13 baking dish. Bake covered for 45 min. Uncover top with cheese and bake 15 more minutes. Cheese should be completely melted and edges should be brown and crusty when finished
* I like to serve with a salad and a little fruit.
