Cranberry TIpsy Banana Bread with Rum Glaze

Simply Living Simply is baking bread today!!  CRANBERRY bread…with Bananas and RUM!

So I had alot, and I do mean ALOT of old, tired, dead bananas lying around.  Sound familiar?  And I hate throwing out food!

So when I spied this amazing recipe for Cranberry Banana bread…I couldn’t resist.  And neither can you when you smell and taste it!  Bake 2 like I did, one for now and one for later!

Cranberry TIpsy Banana Bread with Rum Glaze

Prep Time: 15 minutes

Cook Time: 1 hour

  • • 3 to 4 ripe bananas, smashed
  • • 1/3 cup melted salted butter
  • • 3/4-1 cup light brown sugar, depending on the level of sweetness you prefer
  • • 1 egg, beaten
  • • 1 teaspoon vanilla
  • • 2 tablespoon spiced rum
  • • 1 teaspoon baking soda
  • • Pinch of salt
  • • 1 teaspoon cinnamon
  • • 1/2 teaspoon nutmeg
  • • Pinch of ground cloves
  • • 1 1/2 cup of flour
  • • 1 cup fresh cranberries


  1. • Preheat the oven to 350°F.
  2. • With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
  3. • Mix in the sugar, egg, vanilla and rum, then the spices.
  4. • Sprinkle the baking soda and salt over the mixture and mix in.
  5. • Add the flour, mix. Add the cranberries, and stir until just incorporated.
  6. • Pour mixture into a buttered 4×8 inch loaf pan.
  7. • Bake for 1 hour.
  8. • Cool on a rack.
  9. • Remove from pan, glaze and slice to serve.
  10. Glaze:
  11. • 1 cup confectioner’s sugar
  12. • 1 tablespoon Spiced Rum
  13. • 1 1/2 tablespoon milk
