Spring is just around the corner and that means alot of things to alot of us folks. One of those glorious things is fresh….HONEY!
Now we all know that Honey is great for us, sugar…well, not so much. But did you know that there are some honey’s that are just a little…bit…better??

Natures natural candy, the honeycomb!

Now that I have you all in the mood for something sweet…here is my Honey Almond Shortbread Recipe.
Honey Almond Shortbread
Gather your ingredients…not to hard: Butter, honey, almonds, flour and vanilla. (I missed the vanilla in the pic, sorry!)
Add butter to the bowl, make sure it’s room temperature!
Add your vanilla (mine is homemade…go get the recipe HERE) and your honey.
Beat…until light and fluffy
add your flour (I used a combo of whole wheat and coconut flour)
Turn out onto a floured board
Add your ground almonds
Knead until incorporated.
Put into your pie plate
Press down with hands
Flatten out and smooth with back of spoon
Score your shortbread and prick all over with a fork
Ready for the oven…bake for 30-35 minutes.
Doesn’t it turn out golden and beautiful?

Ingredients
- 1 C. Real Butter, softened
- 1/3 C. Raw Organic Honey
- 1 tsp. Vanilla
- 2 1/2 C. Flour (I used a combo of whole wheat and coconut)
- 3/4 C. Almonds, ground fine
Instructions
- Cream butter, honey and vanilla till fluffy.
- Add flour one cup at a time blending well.
- Turn onto board and continue kneading all remaining flour into dough.
- Add ground almonds, knead until incorporated.
- Press into 9-inch pie plate
- Score shortbread into 12 slices, prick with fork.
- Bake at 300 for 30-35 minutes. Do not over bake.
- Cool 10 minutes.
