There are two things you guys (Kat’s readers) will learn about me… I like love fruit, and I am obsessed with coconut. If you read my fruit pizza recipe, you will see the fruit/coconut theme carried into this recipe! However, I promise I will not make all my recipes fruit and coconut. Scouts honor, folks!

As a kid, my Southern granny would make ambrosia. Her’s was made with marshmallow fluff, marshmallows, and canned fruit in heavy syrup. It was so good it would make you want to slap your mama. Now that I’m older and know more about what’s healthy, I like to work through my granny’s recipes and healthify them.

This recipe is awesome sauce! It contains no refined table sugar, no marshmallows, and no heavy sugar. It is also super easy and quick to make! You just mix everything together in a big bowl and voila…Skinny Girl Ambrosia!

Skinny Girl Ambrosia

Ingredients

1 20 oz can pineapple chunks (not in syrup), drained

5 peeled and separated clementines

1 firm banana, sliced

1 cup blueberries

1 cup diced strawberries

1/2 cup coarsely chopped nuts (walnuts or pecans)

1 cup unsweetened shredded coconuts

1 cup 0% Greek Yogurt

1 Tbs Sucanat

2 tsp raw honey

Directions

In a large bowl, mix the fruit, coconut shreds, and nuts. In a large measuring cup, mix the honey, sucanat, and yogurt. Stir into the fruit mixture. Refrigerate, covered, at least 1 hour before serving.

  1. Oh, YUM! I’m a southern girl, too, who hasn’t had this in for-e-ver! I’m going to have to try your skinny version since I care more than I did when I was younger about what I put in my body. Thanks for the modified recipe!
