3 Crock-pot Recipes

 

I was rummaging through some of my old cookbooks this past weekend, actually looking for some yummy crock-pot recipes!  Don’t we all tend to eat the same things over and over again?  So new/old recipes were in order, especially crock-pot because I just love the easiness and freedom it gives me.  I found a few I thought you would like to try.  Since these recipes came from old, community cookbooks I purchased when I was much younger, they didn’t include pictures.  So…here’s the deal.  Make these dishes and send one in to me….leave it in the comments and I will highlight all the pics!!  How fun this will be….. ! Next time we will be cookin BEEF!

Ann's Ruby Chicken

Ingredients
  1. 2 pounds Chicken, pieces
  2. 1 medium Onions, chopped
  3. 2 tablespoons Oil
  4. 2 teaspoons Salt
  5. 1 teaspoon Pumpkin pie spice
  6. 1 can Orange juice, concentrated ·
  7. 2 teaspoons Orange peel, grated ·
  8. 1 pound Cranberries
  9. 1 cup Sugar
Instructions
  1. Night before: Chop onions, thaw orange juice and chicken, measure spices.
  2. In the morning: Add ingredients to crockpot.
  3. Cook 8−10 hours, till done.
  4. Serve over hot cooked rice.

Baked Stuffed Apples

Ingredients
  1. 6 medium red apples, tart
  2. 1 cup light brown sugar
  3. 1/4 cup golden seedless raisins
  4. 1 tablespoon orange peel, grated
  5. 1/4 cup butter, softened
  6. 2 cups water, very hot
  7. 3 tablespoons frozen orange juice concentrate
Instructions
  1. Wash, core and stem the apples, but don't peel them.
  2. Stand them in a buttered mold and stuff them with 2/3 cup of the brown sugar, the raisins
  3. and the orange peel.
  4. Fill the tops of the core cavities with butter and sprinkle the remaining sugar over the tops.
  5. Place the mold in the slow cooker and pour the hot water into the cooker.
  6. Sprinkle the orange juice concentrate over the apples.
  7. Cover the cooker and cook on Low for 3 to 5 hours, or until the apples are tender.
