Egg and Sausage Breakfast Casserole

Ingredients

  • 1. 12 Beaten Eggs
  • 2. 14 Slices of Whole Wheat Bread OR English Muffins
  • 3. 2 1/4 C Milk
  • 4. 2 1/2 C grated cheese, cheddar/jack or combo
  • 5. 1 lb. Sausage, mild or spicy
  • 6. 1 tsp Salt
  • 7. 1 tsp Ground pepper
  • 8. 1 tsp Mustard powder

Instructions

  1. 1. Grease 9 X 13 glass baking dish
  2. 2. Fry sausage until browned and crumbly, drain grease
  3. 3. Cut the bread or english muffins into square, or tear into chunks for a more rustic look
  4. 4. Place sausage on top of bread
  5. 5. Beat together; eggs, milk, spices
  6. 6. Add Cheese to milk mixture
  7. 7. Pour onto bread & sausage
  8. 8. Cover with foil and place in refrigerator overnight.
  9. 9. In the morning, preheat oven to 350, remove foil and bake for 30-45 minutes or until knife inserted comes out clean and eggs are firm.

Notes

*The last 10 minutes of baking time you can add additional cheese on top **You could also zing up this casserole and add 1 can of organic green chilis
